The whole family enjoys our occasional pancake breakfast (an irregular weekend treat). So when I became vegan I started looking for vegan pancake recipes. The first recipe I tried was too thick, since we like them halfway between a crepe and an American-style pancake.
Luckily, my sister Leigh Drew has included a crepe recipe in her upcoming cookbook, and I have access to her testing site! I added slightly less liquid (since we like our pancakes to be thicker than a crepe) and the batter performed beautifully. My daughter said they were just as good as the pancakes we used to eat “before” (i.e., pre-vegan). My husband declared that these were better. (-:
