I made some chorizo seitan sausages, following the recipe in Viva Vegan. This was a much easier seitan recipe than the one I’d made earlier: it was quicker to prepare the seitan and easier to cook, shaped into sausage shapes then wrapped in tin foil packages in the oven (as compared to simmering it in broth on the stove).
I froze most of the sausages so I can use them when needed. To use, I slice up the sausage and grill it, then eat in a tortilla with salad (pictured), or stir into a tomato-based sauce with roasted vegies (delicious), or use as a sandwich filling… lots of options. I’ll definitely make this again, and my omni husband liked it too.
