Here is one of the easiest meals ever, so long as you remember to press and marinade your tofu in advance. I usually do both the night before, with just a simple marinade of Braggs (or soy sauce), agave nectar, garlic and ginger.
Then it’s just a matter of chopping up lots of yummy, healthy vegetables and frying everything up in a wok or big frypan. (Note to self: get a wok!) I like to include some pine nuts for extra crunch. Serve over noodles or rice, with chopped coriander on top.
