So, there was a casserole I used to cook in my pre-vegan days that everyone in the family enjoyed. I wondered if there was any way to update it to match the new me. So I made up a batch of steamed white seitan from Terry Hope Romero’s book Viva Vegan, and used it in the casserole the next day.
The verdict? The flavours were all good, but I think this seitan would work best in smaller pieces. It was probably my preparation, but the texture was a bit rubbery, which is not really what I was after for the casserole. Now I look through the Viva Vegan recipes, the seitan is often used diced or grated. We live and learn!
