Sweetcorn empanadas

This was my first attempt at cooking empanadas, but it won’t be my last. I followed Terry Hope Romero’s recipe for Creamy Corn-filled Empanadas (Empanadas Humitas) from her book Viva Vegan, except I used wholemeal flour. The filling was pretty easy to make and was yummy. My pastry turned out a little tough, probably because I overworked it a bit when trying to roll it out. I said I would need some more practice. Husband says he’s happy for me to practise making these as often as I like.
