These veggie burgers are mostly made of nuts. What a revelation! They taste fantastic. They are also very easy to make, since everything just gets whizzed together in a food processor (nothing to pre-cook). The recipe is from Dreena Burton’s Let Them Eat Vegan (which has quickly become one of my favourite vegan cookbooks) and is also available online from Dreena’s website, plantpoweredkitchen.com.
I will admit that my kids weren’t so keen on these burgers. I think maybe they found them a little dense. This is ironic since these burgers are billed as kid-friendly… but the adults were extreeeeemly happy with them. I also enjoy them on sandwiches during the working week.
