Soy sauce simmering in a pan with a cinnamon stick and star anise? Someone must be making the vegan bacon marinade from Leigh Drew’s fantastic new book Veganissimo!, which launched this week. I was lucky enough to have a preview copy of the book (one of the perks of being the author’s sister!) and this recipe was one of the first things I tried.
The soy mixture goes together with some other magic ingredients to create an extremely yummy marinade. I tried potato bacon and tempeh bacon, and both were really tasty (and they each get their own post!). I can’t resist throwing some chickpeas into any left-over marinade, and the resulting roasted chickpeas were also extremely yummy (but a bit sticky!).
