Chickpea cutlets are the business

Finally I got around to making the chickpea cutlets recipe from Vegonomicon (also available online). So good! In fact I’ve made them a few times now. The first time I pan-fried them, but now my preferred method is to bake them. I have enjoyed them with veg and gravy for a main meal, or with salad on a sandwich. Very satisfying, and quite simple and quick to make. (Full of gluten flour though, so no good for coeliacs unfortunately.)
