Dreena Burton calls these Gingery Cookies, but to an Australian like me they’re a biscuit, and a very nice biscuit at that. They often end up a little squidgy and moist in the middle, which makes them extra-yummy. The recipe doesn’t seem to be available online but it’s from Let Them Eat Vegan. It contains an instruction that makes me smile: “Bake for 11 minutes”. Not 10 minutes, you understand. Turn it all the way up to 11.
