Zucchini stuffed with quinoa and lentils

I’ve never made stuffed zucchinis before. For what might be the first time in my life, I wondered if I might need a melon baller. Instead, I scooped out the insides of the zucchinis with my smallest teaspoon.

This is a fun dish to make. The filling is meant to have parsley and dill in it, but I wasn’t able to obtain any dill when I went shopping that day. I’ll have to make it again with dill included.

The recipe is from Leigh Drew’s book Greenilicious, which also had me making stuffed cabbage rolls for the first time. Stay tuned for other firsts using recipes from Greenilicious.
