Well this is vegan bacon that you make with shiitake mushrooms. I followed this recipe from Chloe Coscarelli which couldn’t be simpler: you just need oil, salt, pepper, the sliced mushrooms, and an oven. You end up with crispy bits of mushroom which contain these juicy bursts of savory goodness, very reminiscent of bacon. We snacked on some of it, and I put some more in a vegan quiche. You could also sprinkle it on pasta (as suggested in Chloe’s recipe) or, I dare say, add it to a salad. I will definitely make this again. It might not be pretty, but it’s pretty damn tasty.
