I spent last week at ANU: the Australian National University, in Canberra. The student union building is being rebuilt, so we ate lunch at a new area with several pop-up stalls serving food. I enjoyed these vegan “Peruvian-style” burritos from Mr Papa. They serve omni food (in fact, mostly meaty) but their Chica Fina burrito is vegetarian and can be made vegan: described as “pumpkin and mushroom locro with snow peas, sibaris sauce and lettuce”. These burritos were fresh and tasty. The chips and hot sauce on the side were yummy too.

I’m back in Berkeley, so of course I headed back to Cha-Ya vegan Japanese restaurant. Look how pretty this food is! I had the Tonchi Nasu, which is eggplant stuffed with yummy stuff (potato, sweetcorn, soybeans and other veg) then dipped in tempura batter and fried. It’s sitting on a sweet sticky ginger sauce. I enjoyed every mouthful.

One of my dining companions had another stuffed vegetable dish.. again, look at that presentation! This is Hangetsu, which is portobello mushroom layered with tofu, dipped in tempura batter and fried, served with a kiwifruit sauce. You certainly don’t leave hungry after visiting Cha-Ya.

I still haven’t tried their famous Cha-Ya sushi roll (which is, yes you guessed it, dipped in tempura batter and fried!).  The people at the table next to me were eating some… it looked great. Maybe a third trip to Cha-Ya?  (Detailed menu here.)

Shiitake bacon

Well this is vegan bacon that you make with shiitake mushrooms. I followed this recipe from Chloe Coscarelli which couldn’t be simpler: you just need oil, salt, pepper, the sliced mushrooms, and an oven. You end up with crispy bits of mushroom which contain these juicy bursts of savory goodness, very reminiscent of bacon. We snacked on some of it, and I put some more in a vegan quiche. You could also sprinkle it on pasta (as suggested in Chloe’s recipe) or, I dare say, add it to a salad. I will definitely make this again. It might not be pretty, but it’s pretty damn tasty.
